An upscale Italian dinner is calling your name - let me introduce you to Sapore Prime Italian. Sapore Prime Italian is a modern take on classic Italian fare in the Roxborough neighborhood.

We arrived at Sapore Prime Italian and were seated in the bar. The restaurant’s aesthetic is Florentine with shades of dark green, creams and gold throughout the space. Our server Noah was awesome; he knew the menu inside out, had stellar recommendations and was attentive to our needs the entire meal. Noah’s sparkling enthusiasm about Sapore’s food offerings made us so excited to begin eating!

We had the pleasure of meeting GM, Ryan & Executive Sous Chef, Derrick during dinner - both were professional and friendly.

We started off with white wine - the Michael David 2020 Chardonnay (Lodi) from California.

The Chardonnay was pale straw in hue and smelled faintly of apples & butter. The taste was characterized by poached pears and vanilla. Maddie and I both really enjoyed this wine and will order it again in the future (it paired beautifully with the golden beet salad and lobster risotto).

For Starters we had the Calamari Fritti and the Beet Salad per Noah’s recommendations.

The Calamari Fritti is made with charred lemon, castelvetrano olives & calabrese aioli.

The calamari had a mild fried flavor with great crunch. The calabrese aioli added a solid spice component to the dish.

The Beet Salad is made with local beets, arugula, house ricotta, toasted pistachio & blood orange vinaigrette.

This beet salad was incredible and was bursting with bright fresh flavors & colors. The golden beets had been braised in white wine until sweet and tender. The beets’ sweet flavor complemented the smooth ricotta cheese while the blood orange vinaigrette added in a zesty citrus to the arugula.

For Pastas & Grains we had the Shrimp Diavolo, the Lobster Risotto and the Local Mushroom Tortellini.

The Shrimp Diavolo is made with tiger shrimp, broccolini, cherry tomato & Calabrian cream sauce.

The shrimp were tender and sweet in taste. The sauce was creamy with subtle heat coming from the Calabrian chilis. The yellow cherry tomatoes in the pasta added a lot to the over all taste of this dish with delicious bursts of acidity. We loved this mildly spicy pasta, seafood dish.

The Lobster Risotto is made with 7 oz. grilled lobster tail, carnaroli rice, saffron & Meyer lemon cream.

The dish screamed elegance with its rich, creaminess and buttery lobster pieces. The carnaroli rice was thick and velvety with a grainy texture that went great with the chunks of lobster meat. The Meyer lemon cream and saffron gave this dish a summertime feel with an intense yellow hue and lemon zest.

The Local Mushroom Tortellini is made with mystic mountain mushrooms, asparagus, black truffle, spring garlic & mushroom brodo. Noah let us know this is one of Sapore’s most popular pasta dishes and we can see why after having it.

The mushrooms made this pasta so meaty and juicy in all the best ways possible - so savory. The mushroom brodo gave the tortellini a bit of asian flare with a strong umami flavor that had hints of spring garlic.

Between the 3 pastas, we couldn’t pick a favorite because they were all so good! We’ll order all 3 again in the future.

For our Finisher (dessert) we had the Tiramisu Cheesecake. The Tiramisu Cheesecake is made with mascarpone, ladyfingers & espresso glaze. This is one of the best desserts I have had in Colorado.

The Tiramisu Cheesecake was encased in a thin, flakey chocolate shell and had a dusting of cocoa powder on top. The mascarpone filling made for thick fluffy, creamy bites that coated our mouths in heavenly goodness (my mouth is watering just reminiscing). The combination of espresso & mascarpone cheese were to die for. The soft ladyfingers with espresso glaze made for a thin cakey layer in-between cheesecake filling that added a faint sponge-like texture to each bite. So much yes - a must order.
