Three Saints Revival


Tapas & a wine tap program? Count me in. We visited Three Saints Revival for dinner and enjoyed old & new world wines as well as small plates inspired by every edge of the Mediterranean.

We arrived at Three Saints Revival and were seated at a booth in the main dining room. The aesthetic of the restaurant was funky & whimsical - vibrant colors dominated the space with a bohemian flare.

Our server Rob was attentive & knowledgeable on all food & drink offerings - he had solid recommendations for us. Manager, Jesse had amazing energy and ensured we tried some of his mini cocktails that can be ordered during Three Saint's Revival brunch service.

To drink, I started with the Monthly Flight for a Cause, Summer Sips. Each Month Three Saints Revival selects a special charity to partner with & this month it was 4 Paws 4 Life Rescue (an animal rescue in Denver dedicated to finding homes for rescue pets). For every Summer Sips flight sold in July, they donated $1 to the cause. I loved this so much.

The Summer Sips included Chasing Venus Sauvignon Blanc, Tiamo Pinot Grigio, & Dry Creek Chenin Blanc.

Then it was time to start ordering tapas. The Curly Pappardelle was made with basil pesto, summer squash, & cherry tomatoes.

This was our favorite tapa of the night. The pasta was piping hot and generously tossed in delicious basil pesto. The juicy tomatoes and summer squash were vibrant against the silky noodles.

The Patatas Bravas was served with aioli, sofrito, & dill.

The crispy, golden-brown potatoes sat atop bold, red sofrito. The cool creamy aioli was a nice contrast to the hot potatoes.

The Flatiron Steak was served with salsa verde.

The medium cooked bites of flat iron steak were brightened by the salty & tangy salsa verde.

The Watermelon Salad was made with cucumbers, cherry tomatoes, mint, & feta.

The watermelon salad was a simple & refreshing summer tapa. The juicy sweetness of the watermelon complemented the tang of the feta and fragrant mint.

For Cheese we had the Manchego, Le Clair, & Sweet Red Cheddar served with sourdough bread, oil-cured olives, almonds, & pickled onions.

The sweet red cheddar was my favorite. The flavor of the cheddar was subtly nutty with a lovely crumbly texture that had a bit of a crunch.

The Stuffed Piquillo Peppers were made with goat cheese, white anchovy, & egg.

We had two orders of the stuffed piquillo peppers we liked them so much. The scarlet red peppers were sweet and had a hint of heat that gave way to the creamy goat cheese.

For dessert we had the Lemon Cheesecake made with strawberry, lavender, & almond crust. We also had mini espresso martinis.

The mini espresso martinis were a hit - the perfect after-dinner treat. They were strong in roasted coffee taste with a hint of smooth vanilla.
