Great Divide Brewery & Roadhouse

Great Divide Brewery & Roadhouse is now open in Castle Rock people and we were thrilled to check it out for dinner! Vibe Concepts opened Great Divide Brewery & Roadhouse June 1 in Castle Rock’s Riverwalk Castle Rock development. This location is the first licensed Great Divide Brewery outside of Denver International Airport!

Led by Executive Chef James Doxon, Great Divide Brewery & Roadhouse offers elevated comfort food for lunch, dinner and brunch every day, including decadent burgers, fresh entrée salads, innovative pizzas, succulent steaks, memorable desserts and beloved pub favorites with which the restaurant group has become synonymous.  

Great Divide Brewery & Roadhouse has a large deck and open bay windows right on the riverwalk; so pretty much no matter where you are sat in the restaurant, you'll get to enjoy that gorgeous CO weather and take in the Castle Rock scenery.

First thoughts upon arrival at Great Divide Brewery & Roadhouse? 

'OH - this is going to be FUN!!" 

The music was bumping and the place was popping (while still being socially distance safe of course!)! It’s easy to tell that Great Divide Brewery & Roadhouse is going to be a hotspot for birthdays and fun nights - it's an ideal spot to gather with friends & family for really good vibes.

& speaking of good vibes -  Great Divide Brewery & Roadhouse's staff is the epitome of just that. Manager Alley was a doll and made sure we were all set to begin our meal. Our server - Grayson - was PHE-NOM-ENAL (yes, that emphasis is necessary lol! He was that good). You know when you get a charismatic server and you can just tell they're going to make your meal? That's how Grayson is - a fun loving guy, absolutely radiating joy and someone who is SUPER knowledgeable and passionate about Great Divide and their menu. Grayson made our dining experience exceptional and we saw him giving the same stellar service to ALL the tables in our area!  #AskForGrayson

I started off my meal with some of Great Divide's On Tap beer and went for a Beer Flight! Great Divide is known for their experimental, small batch beers and now there are several exclusive to Great Divide Brewery & Roadhouse, totaling 16 Great Divide taps! Getting a beer flight is a great way to dabble in Great Divide's beer creations and you can choose five different beers for only $10! So mix-and-match those brews to your heart's desire and you're v likely to find a new favorite! I told Grayson what kind of beers I gravitate towards and he chose my 5 for me!

For my Beer Flight, I had the Samurai, the Lager, the Colette, the Strawberry and the Margarita Gose. The Beer Flights comes in a numbered silver tray with a customized menu so you can keep track of which beer is which!

How old am I? Five beers old of course!

SAMURAI  | ABV: 5.5% - RICE ALE - this unfiltered and hazy ale is a demure beer with a little crispness - I would categorize this beer as easy drinking! 

GREAT DIVIDE LAGER | ABV: 5.0% - AMERICAN LAGER - A blend of noble and new world hops along with German malts and a traditional Lager yeast create a crisp, refreshing and another easy drinking beer. This was a solid lager. I could throw a couple of these bad boys back with ease #meanttoberepeatedlyenjoyed! 

COLETTE | ABV: 7.3% - FARMHOUSE ALE - Brewed with barley, wheat and rice and fermented at high temperatures with a special blend of four different yeast strains, COLETTE is fruity and slightly tart. The Colette was my second favorite which took me by surprise! Generally I shy away from beers with a dry finish but the Colette was delicious! #moreplease!

STRAWBERRY RHUBARB | ABV: 6.2% - SOUR ALE - Bright and effervescent, this sour is a fun and refreshing, lip-puckering treat. The Strawberry Rhubarb was my favorite out of all five beers! I love a good sour beer and this beer's subtle strawberry bursts had my taste buds singing! #1

TANK FARM SERIES | ROTATING - MARGARITA GOSE. The Margarita Gose will be for the beer fans looking for a strong traditional sour with v tart and dry citrus notes. The lime really comes through!

For Starters, we had the Asian Brussel Sprouts, the Baked Brie and the Thai Cauliflower.

ASIAN BRUSSELS SPROUTS - SWEET & SPICY SESAME, and GOAT CHEESE (#OHyeah, gimme dat goat cheese).

Oh boy, oh boy these brussel sprouts were KILLER - I'm convinced these brussel sprouts will make brussel sprout lovers out of even the staunchest disbelievers!! The brussels were roasted to perfection and the sweet and spicy glaze sends the taste here over the top. You sprinkle that goat cheese on this starter & stick a fork in me, I am done! I'll be getting this starter again and again whenever we dine at Great Divide! Thanks for the recommendation here Grayson!

BAKED BRIE - HOMEMADE COLORADO PEACH MARMALADE, PUFF PASTRY, and FRESH BAKED FLATBREAD.

This starter was so pretty! I loved the floral addition on the baked brie for a nice pop of purple color. I love myself some good baked brie and I love myself some Colorado peaches even more, so this starter was a homerun for me. The creamy and buttery brie was engulfed in a warm, flakey puff pastry and the sweetness of the Colorado Peach Marmalade *chef's kiss* perfectly complemented the savoriness of the brie.

THAI CAULIFLOWER -  BANGKOK THAI SEASONING, VOODOO AIOLI, CRUSHED PEANUTS, and GREEN ONIONS.

The Thai Cauliflower was nutty and buttery with some nice curry spice.

For Entrees, we had the Half Bird Chicken and then two Signature plates, the Short Rib Enchiladas and the Mac & Cheese.

CHICKEN - HALF BIRD, BREAST, WING, LEG, THIGH, and 2 SIDES - CORNBREAD & CREAMED CORN.

Yum. Yum. Yum. YUM.

Great Divide Brewery & Roadhouse's Fried Chicken is gluten free, brined for 24 hours, hand breaded and cooked to order. It's crunchy. It's juicy. It's crispy. It's FREAKING delicious! This was my favorite dish of the entire meal.

The fried chicken comes with pickles on top; just like any respectable fried chicken should (but seriously, if a restaurant isn't serving their fried chicken with pickles, it's not doing it right in my mind so Great Divide is checking off all the boxes!). 

SHORT RIB ENCHILADAS - BRAISED BEEF SHORT RIB*, PEPPER JACK CHEESE, CORN TORTILLAS, JALAPEÑO WHITE CHEDDAR CREAM SAUCE, HONEY CHIPOTLE MOLASSES, and BRUSSELS SPROUTS.

This was Ross' favorite dish of the meal! The short rib meat was sweet and hearty and the honey chipotle molasses glazed over the enchiladas was #unreal. I've never had a sauce comparable to the honey chipotle molasses and we both really, really liked it.

MAC & CHEESE -  CAVATAPPI PASTA, FOUR-CHEESE BLEND, BLACKENED CHICKEN, ROASTED RED PEPPERS, WILD MUSHROOMS, BBQ SAUCE, TORTILLA STRIPS, QUESO FRESCO, and FRESH HERBS.

Great Divide's Mac & Cheese is for any and every comfort food lover! This Mac & Cheese is stacked with juicy chicken and fresh veggies and the drizzling of bbq sauce adds a v nice tang.

For dessert, we had the Colorado Peach Cobbler! COLORADO PEACH COBBLER - FRESH PEACHES, HOMEMADE CINNAMON BUTTER CRUMBLE, CARAMEL SAUCE, and VANILLA ICE CREAM.

I adore some cobbler during the summer time and I love me some Colorado peaches! Great Divide's Peach Cobbler is served piping hot with sweet & jammy diced peaches that are topped with just-the-right-amount-of-golden-brown-crisp and served alongside some vanilla ice cream. #NOM.
