Ristorante Del Lago, The Broadmoor

We stayed at The Broadmoor over the weekend and I will be doing a full review of our stay! The Broadmoor boasts 10 restaurants at the resort (currently not all 10 are open due to Covid-19 but most are getting up and running once again).

The first restaurant that we dined at for dinner was Ristorante Del Lago (located in the West Tower of the resort).

Ristorante Del Lago is The Broadmoor's classic Italian restaurant. We were seated in the bar/lounge area. Our waitress, Jillisa was really nice throughout our meal and had two great recommendations on what to order including the Chef Selection of Antipasti Formaggi & Salumi and the Campanelle Carbonara.

We started with ANTIPASTI MISTI dishes of - the Chef Selection of Antipasti Formaggi & Salumi, Formaggi & Salumi and the Eagles Nest Ranch Wagyu Beef Crudo

The Chef Selection of Antipasti Formaggi & Salumi is the chef's selection of 3 cheeses and 3 meats. The cheeses and meats are presented on a charcuterie board and served with honey, crackers and bread. This was one of Jillisa's recommendations as we let her know we wanted to try several cheeses and cured meats. All three cheeses and meats were amazing and we ate every last bite.

The Eagles Nest Ranch Wagyu Beef Crudo is made with Pickled Shallot, Garlic, Cured Egg Yolk, Parmesan Crisp, Olive Oil, Preserved Lemon, Caper, and Crostini.

The Wagyu Crudo is solid but - as you can expect with crudo - it's a very rich starter. Ross isn't too fond of raw dishes (he loves wagyu and ordered this forgetting crudo is raw lol) so I was left eating most of this app by & ultimately couldn't finish it. The lingering richness and overwhelming savoriness of crudo always lends better as a shared app.

Next up was the PRIMI PIATTI dishes and we had the Campanelle Carbonara and the Gnocchi con Calamari.

The Campanelle Carbonara is made with Smoked Pork and Pecorino.

#THEBEST. Thank Goodness for Jillisa here folks because we wouldn't have ordered the carbonara without her! She recommended this pasta as it's one of Ristorante Del Lago's most popular and we now know why this pasta is such a huge hit - it's INCREDIBLE. Thinking of the rich cheese sauce is literally making my mouth water right now. Hands down the best carbonara I have ever had and a must order.

The Gnocchi con Calamari is made with Squid, Tomato, and Toasted Bread Crumb.

This pasta was...well, it was weird lol. The gnocchi and the calamari did not complement each other texture wise at all. You have the soft pillows of gnocchi mixed in with the rubbery calamari and it was a bizarrely chewy combo. Now top the gnocchi/calamari amalgamation off with a spicy red sauce and you have a dish that's trying WAY too hard. #pass.

For SECONDI PIATTI, we had the Pan Roasted 6 oz. Beef Tenderloin

The Pan Roasted 6 oz. Beef Tenderloin comes with Roasted Fingerling Potatoes, Fried Onions, Basil Butter, and Beef Jus. Ross liked the Tenderloin ok; I did not lol. It came to the table lukewarm & there is nothing worse than a cut of meat that doesn't come to the table piping hot. I had one mediocre bite and turned my full attention back to the carbonara lol. #priorities

Since it was our anniversary, the hotel generously picked up our desserts which was fabulous customer service! We had the Gianduja Layer Cake and the Seasonal Selection of House made Gelato.

The Gianduja Layer Cake is Hazelnut Sponge Cake made with Milk Chocolate Gianduja Mousse and Chocolate Sauce.

Ross devoured this cake - it was a good, nice, lighter chocolate option.

The House made Gelato was solid - we had the Vanilla, Salted Caramel, and Strawberry.

This dessert was gorgeous and came in a pristine silver ice cream goblet with a Pizzelle cookie adorning the top. Yes please!
